These gluten free coconut flour tortillas filled with chicken, spinach, cottage cheese and tomatoes are a great addition to any fit diet.

Ingredients:

  • 400g chicken breast
  • 1 onion
  • 1TBSP coconut oil
  • 1TBSP soy sauce
  • 1TSP garlic seasoning
  • 1/2TSP sea salt
  • ginger spice
  • a pinch of ground black pepper
  • pinch of turmeric

The side:

  • 150g cottage cheese
  • 4 handful of spinach
  • 4 tomatoes

 

Tortillas:

  • 1/2 cup of coconut flour
  • 4 eggs
  • 2/3 cup of water
  • 1/2TSP sea salt
  • dried basil

Steps:

  1. Fry the chopped onion on a spoon of coconut oil.
  2. Add the chopped chicken breast cut to the noodles, stir a few times and add some water.
  3. Cover the meat and mix it occasionally.
  4. After 15 minutes, season the meat, season with salt and simmer for 5-10 minutes.
  5. If necessary, we'll give it a little more water.
  6. Mix the coconut flour with salt, dried basil, eggs and water in the bowl.
  7. We get a denser dough, which is left to stand for 5 minutes for the flour to soak up all the liquids.
  8. We put the dough on an oil-coated tortilla pan.
  9. Roast each tortilla on both sides for 1-2 minutes on a low flame.
  10. Serve tortillas with cooked meat, cottage cheese, spinach and tomatoes.
